  • 1 3/4 cups (220 g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup full fat Greek yogurt (or sour cream), room temperature
  • 1/3 cup whole milk, room temperature
  • 1/4 cup water
  • 1/4 cup (50 g) granulated sugar
  • juice of 1/2 lemon
  • 1 cup (120 g) powdered sugar, sifted
  • 2 tablespoons whole milk
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together sugar and lemon zest until fluffy; add butter and oil.
  4. Mix in eggs one at a time, followed by lemon juice, vanilla extract, and optional lemon extract.
  5. Gradually combine dry ingredients with wet ingredients, alternating with Greek yogurt and milk.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for about 55 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes before transferring to a wire rack.
