- 1 cup brown sugar
- 1/4 cup rice wine vinegar
- 1/2 cup water
- 4–5 cloves garlic, minced
- 3 teaspoons freshly grated ginger
- 2 tablespoons cornstarch (for thickening)
- Green onions for garnish
- Sesame seeds for garnish
Instructions
- Marinate the Chicken: In a bowl, whisk together soy sauce, brown sugar, rice vinegar, water, garlic, and ginger. Pour half over chicken thighs in a shallow dish or zip-top bag. Marinate for at least 2 hours or overnight.
- Prepare the Sauce: Heat remaining marinade in a pot over medium heat. Stir in cornstarch until dissolved. Bring to boil and simmer for 3-4 minutes until thickened; set aside.
- Grill the Chicken: Preheat your grill or cast iron pan over high heat. Remove the chicken from the marinade (discard used marinade) and grill for 6-7 minutes per side until seared. Brush with reserved sauce during the last few minutes.
