  • 2 tablespoons red curry paste

  • 4 cups vegetable stock
  • 1 (13-ounce) package potstickers (vegetarian or meat-filled)
  • 2 cups fresh spinach
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large stockpot over medium-high heat. Sauté garlic, onion, red bell pepper, and sweet potato for about 3–4 minutes until softened.
  2. Stir in red curry paste; cook for an additional minute until fragrant. Add coconut milk and vegetable stock; whisk to combine.
  3. Bring to a boil, then add potstickers and reduce heat to simmer for 6–8 minutes until thickened and potstickers are cooked through.
  4. Stir in fresh spinach and lime juice; cook for an additional minute until spinach wilts.
  5. Ladle into bowls and garnish with fresh cilantro before serving.
