  • 2 pounds chicken breasts or thighs
  • 3 tablespoons olive oil
  • 1/4 cup coconut milk
  • 1/31/2 cup smooth peanut butter
  • 1/4 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 1 tablespoon chili paste
  • 1 1/2 tablespoons lime juice
  • 1 1/2 tablespoons fish sauce

Instructions

  1. In a bowl, whisk together marinade ingredients (except olive oil). Reserve 1/3 cup for later use.
  2. Combine reserved marinade with olive oil in a bag. Add chicken strips and toss to coat. Marinate in the refrigerator for at least 6 hours or overnight.
  3. Soak wooden skewers in water for at least 30 minutes before use.
  4. Preheat oven to 350°F or heat grill to medium-high.
  5. Thread marinated chicken onto skewers and cook until internal temperature reaches 165°F (about 15-20 minutes in the oven or 3-4 minutes on each side on the grill).
  6. For the peanut sauce, bring reserved marinade with coconut milk to a boil; stir in peanut butter until smooth.
