  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup unsalted butter
  • 2 tablespoons canola oil
  • 1 1/2 cups sugar (divided)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 egg yolk
  • 2/3 cup semi-sweet chocolate chips
  • Optional add-ins: 1/2 to 1 cup of M&Ms or nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. In a large bowl, sift together the flour, salt, and cocoa powder; set aside.
  3. In a medium saucepan over medium heat, melt the butter, oil, and half of the sugar (1/2 cup). Stir until melted and remove from heat.
  4. In another large bowl, whisk together the eggs, egg yolk, remaining sugar (1 cup), and vanilla until combined.
  5. Gradually pour the warm butter mixture into the egg mixture while whisking continuously.
  6. Fold in the dry ingredients gently using a spatula until just combined; avoid overmixing.
  7. Add chocolate chips and any desired mix-ins; fold gently.
  8. Transfer the batter to the prepared pan and smooth out the top.
  9. Bake for about 30 minutes (9-inch pan) or around 40 minutes (8-inch pan) until edges are firm but the center is slightly shiny.
  10. Allow cooling for at least two hours before cutting into squares.
