- 1 cup dried white beans (cannellini or great northern)
- 1 medium onion, chopped

- 1 teaspoon thyme
Instructions
- Soak the dried beans overnight in plenty of water.
- In a large pot over medium heat, add olive oil and sauté chopped onion, carrots, and celery until softened (about 5 minutes).
- Stir in minced garlic, thyme, and bay leaves; cook for an additional minute.
- Add soaked beans and enough chicken broth to cover the ingredients plus an extra couple of inches. Include the ham hock.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours until beans are tender.
- Remove the ham hock, shred the meat back into the soup, and adjust seasoning with salt and pepper if necessary.
