2 Hour No Knead Bread

Ingredients
  

  • 1 tablespoon SAF yeast Use Instant or RapidRise yeast if you prefer.
  • 1.5 cups hot water Ensure the temperature is up to 130° F.
  • 3 cups All Purpose Flour AERATE FLOUR BEFORE MEASURING for best results.
  • 1 teaspoon coarse Kosher salt Essential for flavor enhancement.
  • 2 tablespoons extra flour For shaping the dough.
  • parchment paper Make sure it's NOT wax paper.

Method
 

  1. In a large bowl, combine the SAF yeast and warm water. Allow this mixture to sit for five minutes so that the yeast activates and begins to bubble.
  2. Add the aerated all-purpose flour and coarse kosher salt into the yeast mixture. Stir until everything is well combined; remember, it’s normal for the dough to be lumpy and not resemble traditional rising dough.
  3. Cover the bowl tightly with plastic wrap and place it in a warm area for one hour.
  4. After letting the dough rise for about 40 minutes, place your Dutch oven (with its lid) into a cold oven and preheat it to 450° F.
  5. Once the hour is complete, turn your dough out onto a well-floured surface and sprinkle some extra flour on top. Fold the dough over itself about ten times until it forms a ball shape.
  6. Place your dough ball into a large bowl lined with parchment paper and cover it with a towel to rest for another fifteen minutes. Carefully remove the heated Dutch oven from your oven and place the dough into the hot pot before covering it again to bake for thirty minutes followed by an additional ten minutes uncovered until golden brown and hollow-sounding when tapped.
