Ingredients
  

  • 2 cups cooked chicken breast, chopped
  • 3 cups cold cooked rice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 large eggs
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon avocado oil (or vegetable oil)

Method
 

  1. Heat the Blackstone griddle over medium-high and coat it lightly with oil.
  2. Crack and scramble the eggs directly on the griddle. Set aside once cooked.
  3. Add frozen mixed vegetables and cook until softened and slightly charred.
  4. Stir in chopped chicken and garlic, cooking until chicken is heated through.
  5. Spread out the cold rice on the griddle and let it sit for 1-2 minutes to crisp.
  6. Add soy sauce and sesame oil, then return scrambled eggs to the mix.
  7. Stir everything together until well combined and heated through.
  8. Sprinkle with green onions, toss once more, and serve hot.
