Cheese & Egg
  • 1 cup shredded cheddar cheese
  • 1 large egg
Dry Ingredients
  • 1/3 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Cooking Spray
  • olive oil spray for baking

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and grate the sweet potato. Grate the zucchini and squeeze out excess moisture with a clean towel.
  3. In a bowl, combine the sweet potato, zucchini, cheddar cheese, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
  4. Scoop out a tablespoon of the mixture and shape into small tots. Place them on the baking sheet.
  5. Lightly spray the tops of the tots with olive oil spray.
  6. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  7. Serve hot with your favorite dipping sauce.
