Preparation
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and grate the sweet potato. Grate the zucchini and squeeze out excess moisture with a clean towel.
- In a bowl, combine the sweet potato, zucchini, cheddar cheese, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
- Scoop out a tablespoon of the mixture and shape into small tots. Place them on the baking sheet.
- Lightly spray the tops of the tots with olive oil spray.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Serve hot with your favorite dipping sauce.
