Ingredients
  

  • 2 cups corn (frozen, canned, or fresh)
  • 4 oz cream cheese softened
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/2 cup Cotija cheese or feta, crumbled
  • 1/4 cup diced jalapeños
  • 1/4 cup diced green onions
  • 1/2 cup Ro-Tel diced tomatoes and green chilies, drained
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped cilantro plus more for garnish

Method
 

  1. Let the cream cheese sit at room temperature until softened.
  2. In a large bowl, mix cream cheese, mayonnaise, and sour cream until smooth.
  3. Stir in corn, jalapeños, green onions, Ro-Tel, lime juice, and Cotija cheese.
  4. Season with chili powder, salt, and pepper. Adjust to taste.
  5. For cold dip, refrigerate for 1 hour. For hot dip, bake at 350°F for 20 minutes.
  6. Garnish with extra Cotija, cilantro, and a sprinkle of chili powder. Serve with chips or veggies.

Notes

Feel free to swap out Cotija with feta cheese or add black beans for extra protein. You can also turn up the heat with diced serrano peppers or a splash of hot sauce.
