  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
Frosting and Topping
  • 1/2 cup unsalted butter softened
  • 1/2 cup Biscoff cookie butter
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 cup crushed Biscoff cookies for filling/topping

Method
 

Cake Preparation
  1. Preheat oven to 350°F and prepare two 8-inch cake pans with parchment paper.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
  3. In a mixing bowl, beat butter, cookie butter, granulated sugar, and brown sugar until creamy.
  4. Add eggs one at a time, then stir in vanilla.
  5. Alternate adding dry ingredients and buttermilk to the batter, mixing until just combined.
  6. Divide into pans and bake for 25–28 minutes or until a toothpick comes out clean. Cool completely.
Frosting and Assembly
  1. Make frosting: beat butter and cookie butter until smooth, add powdered sugar and milk until fluffy.
  2. Assemble: spread frosting between layers, sprinkle crushed cookies, and frost the top and sides.
