In a separate large bowl, blend room-temperature butter and chilled bacon fat until smooth. Gradually add granulated sugar, brown sugar, bourbon, and vanilla while mixing.
Mix in each egg one at a time until fully incorporated. Gradually incorporate the dry flour mixture until just combined.
Gently fold in crispy bacon pieces and chopped dark chocolate. Set aside some bacon and chocolate for topping if desired.
Drop rounded tablespoonfuls of dough onto lined baking sheets. Bake for 9 to 11 minutes or until lightly browned. Cool on sheets for 5 minutes before transferring to a rack.
