  • 4 large chicken thighs Bone-in, skin-on for extra flavor and moisture.
  • 1/4 cup brown sugar Dark or light, depending on your preference.
  • 1/4 cup Dijon mustard Adds a tangy depth that complements the sweetness.
  • 2 tablespoons olive oil Helps to create a luscious marinade.
  • 2 cloves garlic Minced to enhance flavor.
  • 1 teaspoon salt Essential for seasoning.
  • 1/2 teaspoon black pepper Adds a subtle kick.
  • 1 teaspoon dried thyme Or 1 tablespoon fresh thyme for an earthy note.
  • 1 tablespoon apple cider vinegar Optional, for extra tang.

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the brown sugar, Dijon mustard, olive oil, minced garlic, salt, black pepper, thyme, and apple cider vinegar (if using). Whisk the ingredients until well mixed.
  3. Place the chicken thighs in a baking dish or oven-safe skillet. Pour the marinade mixture over the chicken, making sure to coat each piece evenly. You can also let the chicken marinate in the refrigerator for up to 2 hours for enhanced flavor.
  4. Once the chicken is coated, place the baking dish in the preheated oven.
  5. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
  6. Remove the chicken from the oven and let it rest for 5 minutes before serving.
  7. For a crispy skin, broil the chicken for an additional 2-3 minutes at the end of the baking time.
