  • 4 Roma tomatoes Diced into small cubes
  • ¼ cup basil leaves Chopped
  • 1 clove garlic Minced
  • 1 tablespoon extra virgin olive oil
  • 1-2 teaspoons balsamic vinegar To taste
  • 8 oz feta cheese Block, crumbled
  • ½ block cream cheese 4 oz, softened
  • ½ cup sour cream
  • 1 clove garlic Minced
  • 1 tablespoon lemon juice Freshly squeezed
  • 1 tablespoon olive oil
  • more basil leaves Chopped, for garnish
  • red pepper flakes For garnish
  • Parmesan cheese Freshly grated, for garnish

Method
 

  1. Prepare Tomato Mixture: Start by dicing your Roma tomatoes into small cubes then place them in mixing bowl along with chopped basil leaves, minced garlic, extra virgin olive oil, balsamic vinegar, sprinkle pinch salt, gently toss until combined, let sit while preparing next components allowing flavors meld harmoniously together!
  2. Create Creamy Base: In another bowl combine softened cream cheese, crumbled feta, sour cream, additional minced garlic, freshly squeezed lemon juice, drizzle remaining tablespoon olive oil, blend using hand mixer or fork until smooth incorporating all ingredients thoroughly achieving consistent texture ensuring no lumps remain throughout mixture!
  3. Combine Mixtures: Once both mixtures completed carefully fold tomato-herb blend into creamy base using spatula ensuring even distribution throughout resulting in lovely colorful vibrant dip!
