- Preheat oven to 350°F and grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
- Add diced onions and bell peppers to the skillet and cook for 5 minutes, until softened.
- In a mixing bowl, combine the cream of mushroom soup, sour cream, half the cheddar cheese, salt, pepper, and seasoning blend.
- Stir in the cooked beef mixture and frozen potatoes until everything is well coated.
- Transfer the mixture to the prepared baking dish.
- Sprinkle the remaining cheese on top.
- Bake uncovered for 40–45 minutes, until the top is bubbly and golden.
- Let rest for 5 minutes before serving.
