Ingredients
  

Pasta and Chicken
  • 8 oz spaghetti or any pasta of choice
  • 2 cups cooked chicken shredded or diced
Vegetables
  • 1 cup mushrooms sliced
  • 1 cup peas fresh or frozen
  • 1 small onion chopped
  • 2 cloves garlic minced
Sauce
  • 3 tbsp butter for sautéing
  • 3 tbsp all-purpose flour for thickening
  • 2 cups chicken broth low sodium
  • 1 cup heavy cream or half-and-half
  • 1 cup grated Parmesan cheese plus more for topping
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp Italian seasoning
Topping
  • 1 cup shredded mozzarella cheese for topping
  • 1/2 cup bread crumbs optional, for crunch

Method
 

Prepare the Pasta
  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large pot, melt 1 tablespoon of butter and sauté the onion and garlic until translucent.
Make the Sauce
  1. Add the mushrooms and cook until softened, about 5 minutes.
  2. Stir in the flour and cook for 1 minute, then gradually whisk in the chicken broth and heavy cream.
  3. Bring to a simmer and cook until thickened, about 5 minutes. Stir in the Parmesan cheese, salt, pepper, and Italian seasoning.
Combine Ingredients
  1. In a large mixing bowl, combine the cooked spaghetti, chicken, peas, and sauce. Mix well to combine.
Bake
  1. Preheat the oven to 350°F (175°C). Transfer the mixture to a greased baking dish.
  2. Top with mozzarella cheese and bread crumbs if using.
  3. Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
