Method
- Pat the chicken breasts dry and season both sides with salt and pepper.
- Heat olive oil in a skillet over medium heat. Sear the chicken until golden and fully cooked (internal temp of 165°F). Remove and set aside.
- In the same pan, melt butter and sauté garlic for 1 minute.
- Sprinkle in flour and whisk to form a roux.
- Gradually pour in the milk, whisking to prevent lumps. Cook until slightly thickened.
- Reduce heat and stir in shredded cheddar until melted and smooth.
- Return chicken to the pan and spoon sauce over it.
- Heat through for 2–3 minutes. Top with tomatoes and parsley if using.
