- In a saucepan, combine heavy cream, sugar, and orange zest. Bring to a gentle simmer over medium heat, stirring occasionally. Simmer for 3 minutes to infuse flavor.
- Remove from heat. Stir in orange juice and vanilla extract. Strain to remove zest, then pour into serving glasses. Chill for at least 4 hours.
- For the ganache, combine chocolate and butter in a bowl. Pour over hot cream or microwave for 20–30 seconds. Stir until smooth.
- Spoon a thin ganache layer over the set posset. Chill again for 15–20 minutes. Garnish with zest or chocolate shavings before serving.
