- Line a baking sheet with parchment or wax paper and set aside.
- In a microwave-safe bowl, combine the chocolate chips, peanut butter, and butterscotch chips. Microwave in 30-second intervals, stirring in between until smooth.
- Stir in vanilla extract.
- Fold in the chow mein noodles gently, coating them completely.
- Use two spoons or a scoop to drop small mounds onto the prepared baking sheet.
- Sprinkle each haystack with sugar crystals.
- Chill in the refrigerator for at least 30 minutes or until set.
