  • 24 pcs Oreo cookies crushed
  • 5 tablespoons melted butter
Cheesecake Filling Ingredients
  • 24 ounces cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder
  • 1 teaspoon red gel food coloring

Method
 

Preparation
  1. Preheat oven to 325°F. Line a springform pan with parchment and wrap the outside with foil.
  2. Crush Oreo cookies into fine crumbs. Mix with melted butter and press into the pan. Bake for 10 minutes. Cool.
Cheesecake Filling
  1. Beat cream cheese until smooth. Add sugar, sour cream, vanilla, and eggs one at a time.
  2. Remove 1 cup of batter and mix with cocoa powder and red food coloring to create the red velvet swirl.
Baking
  1. Pour plain batter into the crust. Add spoonfuls of red velvet batter and swirl with a knife.
  2. Place pan into a larger pan with hot water (water bath).
  3. Bake for 55–65 minutes until the center is just set. Cool in the oven with the door cracked. Chill overnight.
  4. Garnish with whipped cream, sprinkles, and whole Oreos before serving.
