Preparation and Cooking
- Preheat oven to 375°F and grease a baking dish.
- In a skillet, sauté onions and garlic in olive oil until fragrant.
- Add bell pepper, zucchini, and spinach. Cook until tender and moisture evaporates.
- In a bowl, whisk eggs, cottage cheese, salt, pepper, and herbs. Stir in half the cheddar cheese.
- Spread vegetables in the baking dish, pour egg mixture on top, and spread evenly.
- Sprinkle the remaining cheddar cheese over the top.
- Bake uncovered for 35–40 minutes, or until the top is golden and the center is set.
- Cool slightly before slicing and serving.
