Preparation
- Preheat the oven to 400°F. Wash and dry the sweet potatoes, then pierce them with a fork.
- Place sweet potatoes on a baking sheet and bake for 45–60 minutes, or until fork-tender.
- While the potatoes bake, melt butter in a skillet over medium heat. Add apples and sauté for 5 minutes.
- Add cranberries, maple syrup, cinnamon, and salt. Cook until the fruit softens and becomes syrupy, about 7–10 minutes.
- Once the potatoes are cool enough to handle, slice in half lengthwise and scoop out a small well in each half.
- Lightly mash the scooped-out potato and stir it into the apple-cranberry mixture.
- Fill each sweet potato half with the fruit mixture.
- Return to the oven and bake for 10–15 minutes until heated through and caramelized on top.
