Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Sauce
  • 1 cup fresh cranberries or frozen, thawed
  • 1 cup orange juice freshly squeezed preferred
  • 1/2 cup sugar adjust to taste
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger grated or minced
  • 1 teaspoon garlic minced
  • 1 tablespoon olive oil for cooking
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
Make the Sauce
  1. In a saucepan, combine cranberries, orange juice, sugar, soy sauce, ginger, and garlic.
  2. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until cranberries burst and sauce thickens.
Combine and Serve
  1. Pour the cranberry orange sauce over the cooked chicken in the skillet.
  2. Let it simmer for an additional 5 minutes to meld the flavors.
  3. Garnish with chopped parsley and serve warm.
