- Add cream cheese, heavy cream, chicken broth, garlic, and Italian seasoning to the crockpot. Stir slightly.
- Cover and cook on LOW for 1-2 hours until the cream cheese has fully melted and sauce is smooth.
- Stir in tortellini directly from the package (uncooked). Mix to coat with the sauce.
- Cook on LOW for 2 to 2.5 more hours, stirring occasionally to avoid sticking.
- About 15-20 minutes before serving, stir in spinach if using, then add Parmesan cheese.
- Season with salt and pepper to taste.
- Serve hot with extra Parmesan or red pepper flakes, if desired.
