  • 1 cup roasted green chiles
  • 15 oz white beans drained and rinsed
  • 1 cup corn fresh, canned, or frozen
  • 3 cups chicken broth
  • 4 oz cream cheese
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 cup chopped cilantro
  • 1 tablespoon fresh lime juice
  • salt to taste
  • pepper to taste

Method
 

  1. Sauté diced onion and garlic in olive oil over medium heat until soft and fragrant.
  2. Stir in shredded chicken, green chiles, white beans, corn, and chicken broth.

  4. Bring to a simmer, then reduce heat and add cream cheese. Stir until melted and creamy.
  5. Simmer uncovered for 10-15 minutes, allowing flavors to develop.
  6. Finish with lime juice and chopped cilantro.
  7. Serve hot with your favorite toppings like sour cream or jalapeños.
