  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup carrots chopped
  • 1 pound ground turkey
  • 1 can pumpkin puree 15 oz
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cans white beans 15 oz each, drained and rinsed
  • 2 cups chicken broth
  • 4 ounces cream cheese cubed

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and carrots; sauté for 5 minutes until soft and fragrant.
  2. Add ground turkey to the pot. Cook until browned, breaking it apart with a spoon.
  3. Stir in pumpkin puree, chili powder, cumin, paprika, salt, and pepper. Cook for 2 minutes.
  4. Add white beans and chicken broth. Stir well and bring to a simmer.
  5. Cover and cook on low heat for 15 minutes.
  6. Add cream cheese and stir until fully melted and creamy.
  7. Serve hot with your favorite toppings.
