Ingredients
  

  • 1.5 pounds baby Yukon gold potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Slice the baby potatoes in half and place them in a large mixing bowl.
  3. Drizzle the potatoes with olive oil and toss with garlic powder, paprika, salt, and pepper.
  4. Spread the potatoes cut-side down on the prepared baking sheet.
  5. Roast for 25–30 minutes, until golden and crisp on the bottom.
  6. Flip the potatoes and sprinkle with grated parmesan cheese.
  7. Return to the oven for another 10 minutes until the cheese is golden and crispy.
  8. Remove from oven, garnish with chopped parsley, and serve warm.
