- Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Slice the baby potatoes in half and place them in a large mixing bowl.
- Drizzle the potatoes with olive oil and toss with garlic powder, paprika, salt, and pepper.
- Spread the potatoes cut-side down on the prepared baking sheet.
- Roast for 25–30 minutes, until golden and crisp on the bottom.
- Flip the potatoes and sprinkle with grated parmesan cheese.
- Return to the oven for another 10 minutes until the cheese is golden and crispy.
- Remove from oven, garnish with chopped parsley, and serve warm.
