Ingredients
  

Chicken Filling
  • 2 cups cooked chicken shredded
  • 1 cup cheddar cheese shredded
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup fresh cilantro chopped
  • 1 tbsp lime juice freshly squeezed
Taquito Assembly
  • 12 small corn tortillas
  • 1 cup vegetable oil for frying
  • 1/2 tsp salt to taste

Method
 

Prepare the Filling
  1. In a mixing bowl, combine shredded chicken, cheddar cheese, cumin, chili powder, garlic powder, onion powder, cilantro, and lime juice. Mix well until combined.
  2. Season with salt to taste.
Assemble the Taquitos
  1. Heat the corn tortillas in a skillet over medium heat until warm and pliable.
  2. Place about 2 tablespoons of the chicken filling on one end of each tortilla and roll tightly.
  3. Secure with a toothpick if necessary.
Fry the Taquitos
  1. In a large skillet, heat vegetable oil over medium heat.
  2. Fry the taquitos in batches until golden brown and crispy, about 3-4 minutes per side.
  3. Remove and drain on paper towels.
Serve
  1. Serve hot with your favorite dipping sauce, such as salsa or guacamole.

Notes

For extra crunch, you can bake the taquitos at 400°F (200°C) for 15-20 minutes instead of frying.
