Prepare the Filling
- In a mixing bowl, combine shredded chicken, cheddar cheese, cumin, chili powder, garlic powder, onion powder, cilantro, and lime juice. Mix well until combined.
- Season with salt to taste.
Assemble the Taquitos
- Heat the corn tortillas in a skillet over medium heat until warm and pliable.
- Place about 2 tablespoons of the chicken filling on one end of each tortilla and roll tightly.
- Secure with a toothpick if necessary.
Fry the Taquitos
- In a large skillet, heat vegetable oil over medium heat.
- Fry the taquitos in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove and drain on paper towels.
Serve
- Serve hot with your favorite dipping sauce, such as salsa or guacamole.
