- In a bowl, mix soy sauce, honey, olive oil, minced garlic, paprika, onion powder, thyme, salt, and pepper.
- Pat the chicken legs dry with paper towels.
- Place the legs into the crock pot.
- Pour marinade over the chicken and coat evenly.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Optional: Broil cooked legs for 3–5 minutes to crisp the skin.
- Serve hot with extra juices spooned over.
