- Slice the zucchini into thin rounds and cut cherry tomatoes in halves. Pat the zucchini dry with paper towels.
- Preheat the oven to 375°F (190°C). Grease a 9-inch pie or baking dish with butter or spray.
- In a large bowl, whisk together the eggs until smooth. Add milk, salt, pepper, and herbs.
- Stir in the zucchini, cherry tomatoes, and cheese.
- Pour the mixture into the prepared dish and smooth the top.
- Bake for 35–40 minutes or until golden and set in the center.
- Let cool slightly before slicing and serving.
