Ingredients
  

  • 8 slices white sandwich bread
  • 4 oz cream cheese softened
  • 1 tbsp fresh dill finely chopped
  • 1 each English cucumber thinly sliced
  • 1/8 tsp salt
  • Pinch black pepper optional

Method
 

  1. Wash and thinly slice the cucumber. Lay slices on paper towels, sprinkle lightly with salt, and let sit for 10 minutes. Pat dry.
  2. In a bowl, combine cream cheese, dill, and black pepper. Mix until smooth.
  3. Spread the herbed cream cheese evenly over all bread slices.
  4. Layer cucumber slices on half the bread slices. Top with the remaining slices.
  5. Trim off the crusts and slice sandwiches into halves or quarters.
  6. Serve immediately or refrigerate for up to 2 hours.
