  • 1.5 cups English cucumbers Thinly sliced
  • 1/4 - 1/3 cup peanuts Chopped small and lightly salted

  • 1 pinch red pepper flakes Optional, for extra spice
  • 1/4 cup creamy peanut butter Base of the dressing
  • 2 tablespoons maple syrup To add sweetness
  • 1.5 - 2 tablespoons water Adjust based on desired thickness
  • 1 tablespoon low sodium soy sauce For umami depth

Method
 

  1. Thinly slice the cucumbers and place them in a large bowl. Sprinkle with chopped peanuts, sesame seeds, and green onions.
  2. In a separate bowl, whisk together the creamy peanut butter, maple syrup, water, soy sauce, sriracha, rice vinegar, and sesame oil until smooth.
  3. Pour the spicy peanut dressing over the cucumber salad mixture and toss gently.
  4. Garnish with additional sesame seeds and chopped green onions before serving.
