- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish. Line with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
- Slowly stir dry ingredients into the wet mixture until combined.
- Fold in shredded carrots and pecans (if using).
- Pour batter into prepared pan and spread evenly.
- Bake for 25–30 minutes, or until a toothpick comes out clean. Cool completely.
- Beat cream cheese and butter until fluffy.
- Add powdered sugar and vanilla to frosting; mix until smooth.
- Frost the cooled bars and top with chopped pecans.
