Frosting
  • 8 ounces cream cheese softened
  • 0.25 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting
  • 0.25 cup chopped pecans for topping

Method
 

Baking the Bars
  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish. Line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
  4. Slowly stir dry ingredients into the wet mixture until combined.
  5. Fold in shredded carrots and pecans (if using).
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 25–30 minutes, or until a toothpick comes out clean. Cool completely.
Making the Frosting
  1. Beat cream cheese and butter until fluffy.
  2. Add powdered sugar and vanilla to frosting; mix until smooth.
  3. Frost the cooled bars and top with chopped pecans.
