Cauliflower Mixture
  • 2 cups cauliflower florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 cup buffalo sauce
Wrap Assembly
  • 4 pieces flour tortillas
  • 1/4 cup avocado or ranch dressing
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sliced cucumbers optional

Method
 

Preparation
  1. Preheat oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, garlic powder, and a pinch of salt.
  3. Spread on a baking sheet and roast for 20–25 minutes until golden.
  4. Remove from oven and toss with buffalo sauce until evenly coated.
  5. Warm tortillas slightly to make them pliable.
  6. Assemble wraps with buffalo cauliflower, dressing, cilantro, and cucumbers.
  7. Roll tightly and serve immediately, or wrap for later.
