Cake Preparation
- Preheat oven to 350°F and grease and flour three 9-inch cake pans.
- Cream together 1 cup softened butter and 2 cups granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, mix flour, baking soda, and baking powder.
- Combine buttermilk with 1 teaspoon vanilla extract.
- Alternate adding dry ingredients and buttermilk mixture to the butter mixture, mixing until just combined.
- Fold in shredded coconut and chopped pecans.
- Divide batter evenly among pans and bake for 25–30 minutes or until a toothpick comes out clean.
- Let cakes cool completely on wire racks.
Frosting Preparation
- For the frosting, beat cream cheese and 1/2 cup butter until smooth.
- Gradually add powdered sugar and 1/2 teaspoon vanilla, beating until fluffy.
- Assemble cake by layering with frosting between each layer and on top. Garnish with extra pecans and toasted coconut if desired.
