- In a bowl, whisk together olive oil, garlic, rosemary, thyme, parsley, lemon juice, salt, pepper, and paprika.
- Add chicken thighs and coat them fully in the marinade.
- Cover and refrigerate for at least 30 minutes or up to overnight.
Cooking
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.
- Arrange chicken thighs skin-side up and roast for 35–40 minutes, until golden and the internal temperature hits 165°F.
