  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Method
 

Preparation
  1. In a bowl, whisk together olive oil, garlic, rosemary, thyme, parsley, lemon juice, salt, pepper, and paprika.
  2. Add chicken thighs and coat them fully in the marinade.
  3. Cover and refrigerate for at least 30 minutes or up to overnight.
Cooking
  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.
  2. Arrange chicken thighs skin-side up and roast for 35–40 minutes, until golden and the internal temperature hits 165°F.
  3. Let rest for 5 minutes before serving to lock in juices.
