Baking Instructions
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Mix in the vanilla extract.
- Gradually add the flour and mix until a soft dough forms.
- Scoop tablespoon-sized balls of dough, roll, and place them on a lined baking sheet.
- Press a thumbprint or use a teaspoon to indent the center of each ball.
- Bake at 350°F (175°C) for 12–14 minutes until edges are lightly golden. Let cool completely.
- In a saucepan over low heat, melt caramels with heavy cream, stirring until smooth.
- Spoon caramel into each cookie center. Let it cool and set slightly.
- Melt chocolate chips in the microwave, then drizzle over cookies.
- Finish with a sprinkle of flaky sea salt if desired.
