Ingredients
  

  • cup canola oil Can substitute with coconut oil, avocado oil, or vegetable oil.
  • ½ cup granulated sugar For sweetness and moisture.
  • ¼ cup brown sugar Adds depth of flavor and moisture.
  • 2 large eggs Acts as a binder.
  • 1 teaspoon vanilla extract Enhances overall flavor.
  • 3 ripe large bananas (mashed) Provides natural sweetness and moisture.
  • 1 ¾ cups all-purpose flour Can substitute with white whole wheat flour or gluten-free blend.
  • 1 teaspoon baking soda Helps the bread rise.
  • ¼ teaspoon salt Balances sweetness.
  • 1 cup blueberries Fresh or frozen; fresh recommended.

Method
 

  1. Preheat your oven to 350°F (175°C). Prepare a 9 x 5 loaf pan by lightly spraying it with baking spray or lining it with parchment paper and then spraying with non-stick baking spray.
  2. In a medium bowl, combine the all-purpose flour, baking soda, and salt using a wire whisk until well mixed. Set this mixture aside.
  3. In a large mixing bowl, whisk together the canola oil and both sugars until fully combined. Add in the eggs and vanilla extract, then incorporate the mashed bananas until smooth.
  4. Gently add the dry ingredient mixture into the wet ingredients using a wooden spoon or rubber spatula. Mix until just combined.
  5. Toss your blueberries in a small bowl with one tablespoon of flour to coat them lightly; fold the coated blueberries into your batter before pouring it into the prepared loaf pan.
  6. Place your loaf pan on the center rack of your preheated oven and bake for approximately 60 minutes. A toothpick inserted into the center should come out clean.
