- Season chicken breasts with salt and pepper.
- Heat olive oil and butter in a skillet over medium heat. Sear chicken for 5–6 minutes per side, then set aside.
- Add mushrooms to the same pan and sauté until browned, about 5–6 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth, scraping up browned bits. Simmer.
- Add Boursin cheese and heavy cream. Stir until smooth and slightly thickened.
- Return chicken to the skillet and spoon sauce over. Simmer for 2–3 minutes.
- Garnish with parsley and serve hot.
