  • 2 cups vegetable broth 480 ml, low-sodium, the flavorful base of the soup.
  • Salt and black pepper To taste, enhancing overall flavors.

Method
 

  1. Begin by heating the olive oil in a large pot over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, ensuring it doesn’t burn.
  2. Stir in the paprika, dried rosemary, dried thyme, and chili flakes into the pot with the garlic. Cook for another minute to allow the spices to bloom.
  3. Add both cans of chickpeas (drained and rinsed) along with the diced potato to the pot. Stir well to combine all ingredients.
  4. Pour in the vegetable broth, ensuring that all ingredients are submerged in liquid. Bring it to a gentle boil then reduce heat and let it simmer until the potatoes are tender, about 20-25 minutes.
  5. Once cooked, taste your soup and add salt and black pepper according to your preference.
