Ingredients
  

  • 8 pieces sourdough bread Choose hearty sourdough for a crispy texture.
  • 1 cup pesto Fresh basil pesto adds vibrant flavor.
  • 1/2 pound fontina cheese Sliced, creamy fontina melts beautifully.
  • 1 1/2 pounds turkey Sliced, use deli turkey or leftover roasted turkey.
  • 2 Roma tomatoes Sliced, juicy tomatoes enhance freshness.
  • olive oil For brushing the bread before grilling.

Method
 

  1. Lay bread slices on a flat surface. Spread pesto generously on each slice of bread to infuse maximum flavor throughout the panini.
  2. Divide the cheese among each slice of bread, placing it directly on top of the pesto. Set 4 slices aside to assemble later.
  3. Divide the turkey among the 4 slices of bread that have cheese on them, layering it evenly to ensure every bite is packed with protein and taste.
  4. Divide the tomato slices among these 4 slices of bread, placing them carefully on top of the turkey to add freshness and a pop of color.
  5. Top with the remaining slices of bread and gently press down to secure everything in place. Brush both sides of each sandwich with olive oil before grilling or toasting on medium-high heat until golden brown and cheese is melted.
