Base
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 1 cup full-fat eggnog
  • 8 oz mascarpone cheese
  • 3/4 cup heavy cream
Flavoring
  • 1 cup cooled espresso or strong coffee
  • 2 tbsp dark rum or bourbon optional
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 2 tbsp unsweetened cocoa powder for dusting
Layering
  • 24 pieces ladyfingers (savoiardi)

Method
 

Preparation
  1. Whisk egg yolks and sugar over a double boiler until thick and pale; let cool slightly.
  2. Fold mascarpone into the cooled egg mixture until smooth.
  3. Whip the heavy cream to soft peaks, then gently fold into mascarpone mixture.
  4. Mix eggnog, espresso, and rum (if using) in a shallow bowl.
  5. Quickly dip each ladyfinger into the liquid—don’t soak—then line a square dish with a layer.
  6. Spread half the mascarpone mixture over the ladyfingers.
  7. Repeat with another layer of dipped ladyfingers and the remaining cream.
  8. Cover and refrigerate for at least 6 hours or overnight.
  9. Before serving, dust with cocoa powder and sprinkle a pinch of nutmeg.
