  • 2 tablespoons unsalted butter softened
  • 1 clove garlic minced
  • 1 tablespoon parsley chopped
  • 2 slices mozzarella cheese
  • 1 slice provolone or Monterey Jack cheese
  • 1 pinch salt

Method
 

  1. Mix the softened butter with minced garlic, parsley, and a pinch of salt in a bowl.
  2. Spread the garlic butter mixture on one side of each bread slice.
  3. Layer mozzarella and provolone on the unbuttered sides.
  4. Close the sandwich with buttered sides facing out.
  5. Heat a skillet over medium heat and grill the sandwich for 3–4 minutes per side until golden and cheese is melted.
  6. Remove from skillet, let rest for 1 minute, then slice and serve.
