Chicken
  • 1.5 pounds chicken breast, cubed Cajun seasoned
Sauce
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons butter for cooking
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 4 ounces cream cheese
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups fresh baby spinach
  • 1 cup chopped artichoke hearts
  • 12 ounces cooked cavatappi or rotini pasta
  • 1 teaspoon red pepper flakes optional
  • 1 tablespoon chopped parsley for garnish

Method
 

Cooking Steps
  1. Season cubed chicken with Cajun seasoning.
  2. In a large skillet, heat butter and olive oil over medium-high heat. Add chicken and cook until golden and fully cooked. Remove and set aside.
  3. In the same skillet, add more butter and minced garlic. Sauté for 30 seconds until fragrant.
  4. Add cream cheese and heavy cream. Stir until smooth and melted.
  5. Mix in Parmesan and mozzarella cheese until melted into the sauce.
  6. Add spinach and artichokes; cook until spinach wilts.
  7. Stir in the cooked pasta, then return chicken to the skillet and toss everything to combine.
  8. Garnish with red pepper flakes and parsley. Serve hot.
