  • 1 lb ground beef preferably lean
  • 1 cup orzo pasta
  • 1 can diced tomatoes 14.5 oz
  • 2 cups beef broth low sodium
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tbsp fresh parsley chopped

Method
 

Cook the Beef
  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3 minutes.
  2. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it up with a wooden spoon, about 5-7 minutes.
Add Ingredients
  1. Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer.
  2. Add the orzo pasta, stirring to combine. Cover and cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
Serve
  1. Remove from heat and let sit for a few minutes. Serve topped with grated parmesan cheese and chopped parsley.

Notes
