Crumble ground turkey into the skillet, breaking it apart as it cooks. Stir occasionally for about 6-8 minutes until fully browned with no pink remaining.
Wash the zucchinis, trim their ends, slice them lengthwise, then cut them into half-moon shapes about 1/4 inch thick. Add these sliced zucchinis to your skillet with the turkey mixture.
Stir in dried oregano, salt, black pepper, and crushed red pepper flakes. Pour in chicken broth, stirring everything together before reducing heat to low and simmering for 3-4 minutes.
Once zucchini is tender yet firm, sprinkle grated Parmesan cheese over the skillet mix. Stir gently until the cheese melts evenly before adjusting seasoning as needed.
