Ingredients

  • 1 pound ground turkey Choose lean ground turkey for a healthier option.
  • 2 medium zucchinis Fresh zucchinis add flavor and nutrition.
  • 1 tablespoon olive oil Enhances the taste while being heart-healthy.
  • 1/2 medium onion Provides depth to the dish's flavor profile.
  • 2 cloves garlic Offers aromatic richness.
  • 1 teaspoon dried oregano Adds a classic herbal note.
  • 1/2 teaspoon salt Amplifies all the flavors.
  • 1/4 teaspoon black pepper Provides a subtle kick.
  • 1/4 teaspoon crushed red pepper flakes Optional but recommended for heat.
  • 1/4 cup chicken broth Keeps the dish moist and flavorful.
  • 1/4 cup grated Parmesan cheese Brings creaminess and umami flavor.

Method

  1. Start by heating olive oil in a large skillet over medium heat. Once hot, add finely chopped onion and sauté until soft and translucent, about 3-4 minutes. Then add minced garlic for another 30 seconds until fragrant.
  2. Crumble ground turkey into the skillet, breaking it apart as it cooks. Stir occasionally for about 6-8 minutes until fully browned with no pink remaining.
  3. Wash the zucchinis, trim their ends, slice them lengthwise, then cut them into half-moon shapes about 1/4 inch thick. Add these sliced zucchinis to your skillet with the turkey mixture.
  4. Stir in dried oregano, salt, black pepper, and crushed red pepper flakes. Pour in chicken broth, stirring everything together before reducing heat to low and simmering for 3-4 minutes.
  5. Once zucchini is tender yet firm, sprinkle grated Parmesan cheese over the skillet mix. Stir gently until the cheese melts evenly before adjusting seasoning as needed.
