- Preheat the oven to 350°F. Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large mixing bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- Add eggs, oil, granulated sugar, brown sugar, and vanilla extract to the dry mixture. Stir until just combined.
- Fold in grated carrots, grated apple, and nuts (if using). Do not overmix.
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
