Baking Instructions
- Preheat the oven to 350°F and line or grease a muffin tin.
- In a large bowl, mash bananas and mix in Greek yogurt, eggs, maple syrup, and vanilla until smooth.
- Add oats, whole wheat flour, baking soda, baking powder, cinnamon, and salt. Mix gently.
- Fold in chocolate chips, reserving a few for topping.
- Divide batter into muffin cups, about 3/4 full. Top with extra chips and banana slices if desired.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes in the tin, then transfer to a wire rack.
