Cooking Steps
- In a saucepan, whisk together egg yolks, sugar, and cornstarch until smooth.
- In another saucepan, heat milk and cream until warm (not boiling).
- Slowly whisk the warm milk mixture into the yolks to temper.
- Return everything to the stove and cook over medium-low heat, stirring constantly until thickened.
- Remove from heat. Stir in vanilla, nutmeg, and butter until melted and smooth.
- Let cool slightly and transfer to jars.
- Chill for at least 2 hours to allow the jam to set.
